Catalog Description

The Nutrition and Foods Skills Certificate Program is designed to provide students with fundamental knowledge and skills in nutritional science, food science, food preparation, and food safety and sanitation.  The required courses prepare students for entry-level positions in nutrition and foods. Examples of entry-level positions include nutrition assistants for community agencies such as The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) and Head Start, diet aides or diet clerks in hospitals, and dietary service workers in hospitals or school foodservice.

Outcome 1: Explain nutrient needs and how diet and lifestyle choices impact health.
 
Outcome 2: Differentiate between proper and improper food safety and sanitation techniques.
 
Outcome 3: Determine the correct preparation methods and assess the quality of a wide variety of foods.

No active inventory records need to be made inactive or changed as a result of approval of the Nutrition and Foods Certificate. This certificate does not replace any existing program.
List similar programs at other colleges in the Orange County Region
Mt. San Antonio College offers a 9 unit Nutrition Certificate. This program closely resembles our proposed certificate, although our certificate requires one more class. Saddleback College offers a 19-22 unit Nutrition Certificate. The core courses are similar to the core courses in the proposed Fullerton College Nutrition and Foods Certificate but they offer more courses and require more units in the restricted electives.
Annual Enrollment projects (non-duplicative)
We project that 20-30 students will complete the Nutrition and Foods Certificate each year.
