Program Goal
The proposed Skills Certificate in Functional Nutrition for Health is designed to prepare students with skills in the areas of culinary arts, nutrition, and business as they apply to nutritional health and well-being, using an entrepreneurial model. With the current upsurge in healthy-eating awareness and its effect on disease and longevity, there has been an increase in need for education for current and emerging markets in this subject area. Personal chefs, culinary health specialists, health food industry workers, and in-home care providers are among the growing occupations where workers are using an entrepreneurial model to grow their careers. This group of courses is designed to provide these workers in this emerging industry the skills to be able to make informed decisions about eating for health and wellness, as well as skills to run their own businesses effectively.
