Catalog Description

The Fundamental Skills of Management in Hospitality certificate of achievement will help students to develop modern management strategies for sectors in the Hospitality Industry. A certificate of achievement will also introduce students to theories and strategies to be come an effective leader. Concentrating on effective communication, a student will build on the management foundation by developing tools and strategies to manage people in the hospitality industry. The program concludes with a work or volunteer experience where students work directly with an employer to gain management work experience.

Enrollment Completer Projections

Analysis of post-secondary completions in the region showsthat on average 282 awards were conferred in the Central Valley/Mother Loderegion each year according to the Center of Excellence.

According to the Center of Excellence report “there were 51restaurant food services and management students who received a degree or certificate or attained apprenticeship journey status and 53 who transferred;78% of students obtained a job closely related to their field of study; a 30%median change in earnings was reported; and 66% of students attained a living wage.”

The trend in degrees and certificates and been steadily increasing over the last 5 years by more than 20%. Almost doubling since2017-2018 to now this program will raise degrees and certificates awarded to students by 25%. The first year of the program forecasts 15 new students in the program and no less than 12 students completing the program and earning a certificate of achievement.

Students who earn a Certificate of Achievement in Fundamental Skills of Management in Hospitality will be able to demonstrate mastery of a set of skills ideal for job acquisition and providing strategies to become an effective leader and manager in the hospitality industry.

This certificate is designed to introduce students to specific sectors of the hospitality industry as well as provide the fundamental skills required to work in today’s industry. These skills include oral and written communication, quantitative literacy, creative and critical thinking, basics of hospitality management, leadership, informational technology, and marketing. Collectively, a certificate of achievement will help students get an understanding of the mind set as well as the strategies needed to be an effective leader and manager. A certificate of achievement in will also provide a solid foundation to promote continued education in hospitality management as well as provide tools to help get an entry level or low-level management position in a restaurant, hotel, or other service-based business. Identified in the Labor Market Analysis is a current shortage of employees in industry and one of the fastest growing, largest occupation and highest paying sectors is Management.  

 Beginning with outlining the world of modern management tactics then examining how to apply these strategies and tactics, students will then learn how to become a more effective communicator in business and finally work closely with an employer to gain valuable knowledge to implement management strategies while obtaining college credits. 

Madera Community College has the facilities and resources to administer the program and develop the technical skills of students. Faculty teaching in the program will meet the minimum qualifications and experience for teaching in the CATH/Hospitality Management program.

This program will not fulfill the training and education necessary to transfer to a California State University. Offering a certificate of achievement in Fundamental Skills of Management in Hospitality at Madera Community College and Oakhurst better serves the community and students in Madera County. Entry level and low-level management positions are in high demand and labor market research has identified a shortage. The program provides students in the community an opportunity to gain technical training and certification in modern business and management theories. The program also provides tools students could use to open a business locally.

Takenfrom page 101 of the MCC Master Plan “Creating a Culinary Arts, Tourism, andHospitality (CATH) Program: Madera serves as the gateway to Yosemite drawingmillions of tourists every year. The wine and food industry in Madera attractsvisitors interested in wine tours and wine and food pairings. Hospitality andtourism provide job opportunities at every level – from entry-level all the wayto restaurant and hotel management and entrepreneurs. We propose to start a CATHprogram at our Madera and Oakhurst campuses in partnership with local highschools, adult programs and industry partners.

 

ResourcesRequired: New faculty position to develop curriculum and provide instruction.Culinary Arts facilities at local high school districts, local area hotels andrestaurants will be used initially as hands-on teaching laboratories.”

A Cal-Trans sponsored economicreport identified that in 2016, jobs increased in Madera County by 2700positions in multiple sectors: government, agriculture, construction, as wellas leisure and hospitality were the top four of the list.

5.         PLACEOF PROGRAM IN CURRICULUM/SIMILAR PROGRAMS (Explain how the program fits incollege's existing program inventory.) All non-ADT programs must complete.

Eight of the ten classes, BA-15, OT-12A, BA-33, BA-52, MKTG-10,ECON-1B, BA-38, and BA-19V fit into a Business Administration Certificates ofAchievement.  This proposed program is anupdating of the current Hospitality Management Certificate of Achievementwithin the Business Administration department offering OT and BA classes. Manyof the classes are a part of the ATS degree for business and provide anopportunity for students to explore options in hospitality and not just generalbusiness.

6.         SIMILARPROGRAMS AT OTHER COLLEGES IN SERVICE AREA (Provide justification of the needfor the program in the region.) All non-ADT programs must complete.

There is no Hospitalitycertificate of achievement offered district wide. Fresno City College has afood service management program offering Food Service Management: Food ServiceManagement Certificate of Achievement and 3 certificates in Culinary Arts.
