TheFoundations of Hospitality certificate of achievement will introduce studentsto best practices for engagement and communication with both guests andemployees in the hospitality industry. This seven-class program will examinethe classic service styles, introduce food safety concepts, service of guestsand how to communicate with guests and employees. The program also coverscomputer concepts and the types of jobs available in the hospitality industry.A certificate of achievement will also provide the opportunity to take twodifferent examinations for industry required certification: ServSafe ManagerCertification and the TIPS Alcohol Certification.  

Enrollment Completer Projections

Analysis of post-secondary completions in the region showsthat on average 282 awards were conferred in the Central Valley/Mother Loderegion each year according to the Center of Excellence.

Center of Excellence report “there were 51 restaurant foodservices and management students who received a degree or certificate orattained apprenticeship journey status and 53 who transferred; 78% of studentsobtained a job closely related to their field of study; a 30% median change inearnings was reported; and 66% of students attained a living wage.”

The trend in degrees and certificates and been steadilyincreasing over the last 5 years by more than 20%. Almost doubling since2017-2018 to now this program will raise degrees and certificates awarded tostudents by 25%. The first year of the program forecasts 15 new students in theprogram and no less than 12 students completing the program and earning acertificate of achievement.

The Foundations ofHospitality certificate of achievement is designed to introduce students to a specificarea of the hospitality industry as well as fundamental skills required to workin today’s industry. These skills include oral and written communication,quantitative literacy, creative and critical thinking, basics of hospitalitymanagement, leadership and informational technology. Collectively, acertificate of achievement will help students get an understanding ofoperations in hospitality and provide a solid foundation to continue educationin hospitality management as well as provide tools to help get an entry levelor low-level management position in the hospitality industry; specifically, ina restaurant, hotel, or other service-based business. 

Madera CommunityCollege has the facilities and resources to administer the program and developthe technical skills of students. Faculty teaching in the program will meet theminimum qualifications and experience for teaching in the CATH/HOTCAR/HospitalityManagement program.

This program will notfulfill the training and education necessary to transfer to a California StateUniversity.  The program will alsoprovide the option to take two required industry certifications. One in foodsafety and the other in service of alcohol.

Offering acertificate of achievement in Foundations of Hospitality at Madera CommunityCollege and Oakhurst better serves the community and students in Madera County.Entry level and low-level management positions in service-based industriesaccording to the Center of Excellence are in high demand.  The certification offered also creates a moreequitable environment for students as the exams require proctors and have otherbarriers to entry. The program could benefit both students and the community bymaking these certificates more accessible.

3.      Identify the causes of foodborne illness and the practices to prevent foodborne illness in a food service system.
4.      Explain the steps in successfully resolving customer complaints in the hospitality setting.
5.      Organize, compose, and revise effective, written business communication using proper format and content.
6.      Demonstrate critical thinking skills by researching, preparing, and presenting formal reports using graphic elements where appropriate.
7.      Apply effective information technology skills to perform practical business functions that include word processing, spreadsheet, presentation, and database management applications.

Takenfrom page 101 of the MCC Master Plan “Creating a Culinary Arts, Tourism, andHospitality (CATH) Program: Madera serves as the gateway to Yosemite drawingmillions of tourists every year. The wine and food industry in Madera attractsvisitors interested in wine tours and wine and food pairings. Hospitality andtourism provide job opportunities at every level – from entry-level all the wayto restaurant and hotel management and entrepreneurs. We propose to start aCATH program at our Madera and Oakhurst campuses in partnership with local highschools, adult programs and industry partners.

 

Resources Required: New facultyposition to develop curriculum and provide instruction. Culinary Artsfacilities at local high school districts, local area hotels and restaurantswill be used initially as hands-on teaching laboratories.”

 

A Cal-Trans sponsored economicreport identified that in 2016, jobs increased in Madera County by 2700positions in multiple sectors: government, agriculture, construction, as wellas leisure and hospitality.

Five of the sevenclasses, IS-15, IS-18, BA-5, BA-12, and BA-47 fit into a BusinessAdministration Certificates of Achievement. IS-15 is a part of 5 Certificatesof Achievement, and IS-18, BA-5, BA-12 and BA-47 are a part of one. Thisproposed program is an updating of the current Hospitality ManagementCertificate of Achievement within the Business Administration departmentoffering OT and BA classes. Many of the classes are part of the ATS degree forbusiness and provide an opportunity for students to explore options inhospitality and not just general business.
