Catalog Description

The Wine and Wine Service Certificate of Achievement is designed to recognize proficiency in basic wine knowledge, wine service, and wine sales. Skills acquired include basic knowledge of grape production, wine making, wine varietals, wine service and sales. Successful completion of this certificate would provide employers with workers that are well-versed in most topics of wine, and the wine business. Wine service personnel would expect to see wage increases because of enhanced training in wine table service, skills in the upselling of wine, fault detection, and general wine knowledge.Career Opportunities in Culinary Arts, Hospitality Management Restaurant servers, fine dining establishment servers, banquet servers, preparation for higher level wine certification such as Certified Sommelier, wine servers will see wage increases due to enhanced knowledge.

The primary goal of this program is:

 To be able to identify and assess world wines for regions,flavor, and the use of sensory perception and evaluation.

 The primary objectives of this program are:

 1.     To develop skills in proper identifying world wine growing regions, varietals, labels, laws terroir, and wine production techniques.

2.     To develop skills in assessing olfactory and flavor notes relative to specific growing regions as well as the geopolitical aspects of the regions.

3.     To develop good skills in sensory perception and evaluation of wines with practical examination.

Napa Valley College Viticulture and Winery Technology: AS Degrees The programs of the Viticulture and Winery Technology department are designed to prepare students for careers in the North Coast wine industry. The one-year Certificate and two-year Associate of Science options provide students with the knowledge and skills essential for success. The Certificate in Viticulture and Winery Technology consists of production-oriented courses in viticulture and winemaking. The Certificate in Wine Marketing and Sales is a mix of viticulture, winemaking and business courses. Certificate programs may be modified to meet the career goals of the individual student. The typical student will be able to earn a Certificate in one to two years. Students who complete the Associate of Science in Viticulture and Winery Technology degree specialize in either Viticulture, Winemaking or Wine Marketing and Sales. The Associate of Science degree includes general education courses, basic science courses and core courses in the degree option.
